Mid|Nights at The Springs

In the summers of 2020 and 2021, I teamed up with some folks in Brooklyn to operate a food truck in Greenpoint. I was in charge of all aspects of cooking, menu building, food ordering, staffing, training, scheduling, pos, and daily operations for the food programs.

It was not only a wonderful way to spend my time during the early stages of post-COVID re-opening, but it was a pleasure to jump back on the grill (where I started my early years of work when I was a young teenager).

My menu was fried comfort: Chicken Sammies, Empanadas, Yucca Fries, Steak Fries, Burgers, Vegetarian Calamari, Ice Cream Sammies . . . and even Fried Ice Cream. Delicious. Even got a few weddings and catering events in while the summertime fun lasted.
